Honeyville's Vital Wheat Gluten can be used to greatly improve bakery products. It is the gluten in wheat flour that is responsible for the unique features of bread, features which are not possible with other cereal flours. Vital Wheat Gluten is a concentrated protein that possesses a special visco-elastic property. As a functional protein, vital wheat gluten provides additional qualities to the dough when used in baked goods. Wheat flour contains some natural gluten but often not to the extent desired. Many baked goods benefit from the addition of vital wheat gluten. The effect on the bread is remarkable.

The best way to buy gluten!

If you bake a lot of homemade yeast bread and rolls, this is the best way to buy gluten. Even bread flour doesn't have enough gluten to make yeast bread light and fluffy, and whole wheat flour is a different story altogether. I order gluten in these great big cans, and it beats the heck out of trying to find it in little boxes in the stores. Even my whole wheat bread is light and yummy.


great for breads

It really made my bread rise and stay fresh. I have been told that home made bread from bread machines does not keep for longer than one day or maybe two. My bread stayed fresh longer and I think it was due to the wheat gluten. It tasted very nice as well which is fantastic

I bought this item because it is a required ingredient in a breadmaker cookbook that I received as a gift. So far the recipes have turned out great using this product.


Good for vegans and bread making

I'm not a vegan and I'm not allergic to wheat gluten. Nevertheless, I use this to make Seitan in many varieties. Extracting wheat gluten from flour is very time consuming so this is a real time saver. My favorites are Asian Seitans and faux pastrami. You can also use it to fortify some breads. If you don't know what wheat gluten is used for then don't buy it.
