Silpat=easy baking

When I first saw a silpat sheet used on "Emeril Live", I thought the easy release it showed was too good to be true. Still I thought it was worth a shot since I love to make cookies. The silpat means no shortening is needed because the dough goes straight on the silicon mat. Clean up is a snap because nothing sticks and there is no extraneous grease. Successive batches can be done on the same cookie sheet with the same Silpat so long as you rinse and wipe it down between.

Storage requires some thought. I keep mine flat in the baking sheets in a drawer. You may also store them rolled.

Silpat is a "must have" for any avid baker.

Parchment Replacement

For the most part, I no longer use parchment paper when baking. This has saved me money since parchment can be pricey. I have the half sheet and quarter sheet sizes.

The Silpat keeps baked goods from sticking, but it isn't just for baking. I use it when roasting veggies. I sift flour on it because it makes it eaiser for me to get the flour into my Kitchen Aid. I also shape dough on it. Pans are super easy to clean up after using a Silpat.

Just wash it in hot soapy water and it should work fine for you. Do not put it in the dishwasher or cut it.

I heard the hype. I questioned how essential a Silpat could really be. The rumors are true! Silpats help with even baking (no brown cookies on the outside and undercooked on the inside of the baking sheet), results in EXCELLENT texture on the bottoms, so EASY to clean, so EASY to use while making lots of cookies - just give it a swipe and load it back up to go in the oven (as opposed to negotiating curling parchment or cleaning and re-greasing a baking sheet). A very worthwhile splurge. Also a terrific gift - a person can easily use more than one!
