Fantastic Method & Cookbook

I live in Denver and have had the opportunity to learn this method directly from Elizabeth Yarnell at a local cooking school. Every time I make one of Elizabeth's recipes I am struck with how easy, nutritious and pretty they are. Anyone with a desire to cook healthy and fast meals should check out this method. Investing in a good dutch oven is key...but worth it!!


Happy One Potter

My Lodge Logic Serving Pot with Iron Cover arrived today & this cookbook last week, so I was ready to try my first one pot meal. I had a sweet potato, a couple of chicken thighs, some mushrooms, jalapeños and lots of fresh spinach. After only minutes of prep time, I put my baby dutch oven into my Cuisinart TOB-160 (like Cuisinart TOB-165 Convection Toaster Oven/Broiler, White without convection feature). With more than would fit in the pot, I made a fresh spinach salad, brewed a cup of coffee Keurig B40 Elite Gourmet Single-Cup Home-Brewing System and moved outside for a soak in the hot tub while my dinner cooked.

Dinner was light, tasty and satisfying. I agree with another reviewer that the spinach looked a little strange but it was edible and added moisture to the pot. The chicken and potatoes were so tender that I easily cut them with a wooden spoon. The mushrooms were nicely firm & the peppers still hot! For just me, I have half left over for tomorrow's dinner. I felt satisfied with this portion and not too full--just right. If serving a hefty eater, perhaps filling a Lodge Enamel on Cast Iron 3 Quart Dutch Oven, Café would ensure plenty. It too fits in the Cuisinart Toaster Oven if the knob on the lid is removed and the hole plugged with foil or a nut, washer & bolt. Oh yes, I got one of these from Amazon too so I can fix tomato based food.

Regarding this cookbook, definitely go for it. Even if you don't follow the recipes (I didn't this time), it explains very well a style of cooking that is a winner all around.

With all this cast iron (also bought Lodge Enamel on Cast Iron 6 Quart Dutch Oven, Island Spice), I also strongly recommend the Athena 6000 Max Burton Induction Cooker UL 110V I bought at the recommendation of TheInductionSite.com in response to an email asking for a recommendation. I give 5 star rating to all the items I have mentioned. Now it is time to stop researching, shopping and buying and to start enjoying wonderful economical healthy meals prepared for just 1 (or 2).

I have put a lot of research into this project because I am determined to eat healthy and lose weight. My investment for everything mentioned here (except the coffee brewer) is less than $265. The only item I had to pay shipping for was the cooktop. Compared the cost of most weight loss programs, I have come out a winner. Whether I succeed in losing weight or not, with much thanks to Amazon and all of you who have posted reviews, I have a well stocked kitchen with quality 5-star items at bargain prices. I hope this review is helpful to someone too.

Delicious!

I've tried 3 recipes so far since I received the book and they were all delicious and super easy to prepare. I'm looking forward to trying more of Gloria's recipes. I purchased a 2 quart enamel coated cast iron Dutch oven just as Gloria recommends and the meals turn out perfectly. The recipes in this book are based on using a 2 quart Dutch oven to provide a complete dinner for two adults... perfect for my husband and I. The recipes could be doubled, but of course you would need a larger Dutch oven. Effortless... tasty... healthy!


OK, not great

I've prepared four dishes from this book so far and none of them were fabulous. They are definetely easy to prepare and I love the one pot idea but the taste leaves something to be desired. One dish was much too dry. Maybe if you make a dish once and then improvise and tweak the ingredients, it might make them better, but I wouldn't serve any of them to company yet! The best thing about this book is that you can eat healthly because the meals are prepared with fresh vegetables, fruits, lean cuts of meat and fish and no additional fats. So from this standpoint, preparing healthy food it's a big plus. It's worth a try because I think if you're willing to experiment, you can make the basic recipes even better.
