mother, I have spent a very long time trying to just come close to one of her
delicious
pie
s. All of that training she gave me as a child on the perfect, easy pie crust flopped each time. My filling was too runny, too sour, too sweet, too...well, just too. And, yes, I've bought every pie book possible, only to have each attempt turn out inedible and my esteem riddled with disappointment. My family had given up. That was until I bought this book.
I didn't think it possible, but everyone now thinks I'm a pie genius. My husband couldn't believe the Bumble Berry Pie with the unusual shredded top crust. He says he never wants a regular top crust on a fruit pie again. Our friends ate a whole Chocolate Brownie Pecan Pie in one sitting. And the Blackberry Silk...mmmmm. I could go on and on...and not one failure.
Thank you, Mr. Haedrich. After years of failing, I'm now remembering what it's like to sit at my gran's table and wait in anticipation for that delicious pie to come out of the oven. And now my family is doing the same.

I made my first really good
pie
crust using the basic recipe in this book. I have
tried
to make piecrust, on
and
off, for 35 years, and never once have I been really happy with my results! This book changed all that. Finally, I can make good pies! My husband is happy! BTW, one reviewer is correct about the amount of thickener in the fruit pie

. You might need to increase it some over what is written to keep the pies in this book from being somewhat (not terribly) runny. But I have always found that to be
true
with fruit pie recipes, everywhere. Wonder why that is?

Making pies can be "as easy as pie."
I've enjoyed the author's previous cookbooks, but this is definitely one of the best. His
pie
crust directions -the part most cooks find trickiest - are very clear
and
really work. I especially like the food processor instructions which enable you to produce an excellent pie crust in minutes. The
recipes
are
delicious
and include a wonderful variety. Today we're enjoying the Peanut Butter Cheesecake Pie with a Sour Cream-Brown Sugar topping, and it is every bit as delicious as it sounds. We've also had several of the fruit pies, and they were all very tasty. If you love pies, you'll want this book.
